A Little Bit About Me

OUR STORY

Welcome to Nature on a Plate

Nature On A Plate started with a simple belief-Gardening is about so much more than just growing plants.
It is a chance to reconnect with nature, to learn more about our health and to rediscover the simple habits that help us live healthier, happier and more meaningful lives.
That’s why I started Nature On A Plate – a place where gardening, seasonal cooking, culinary history and evidence-based wellbeing come together. Whether you need advice on what to plant, when to sow seeds, how to care for your garden or what to cook with your harvest, you will find practical advice, seasonal inspiration and information grounded in science and experience.
My journey started with a love of gardening but evolved over time into a much deeper curiosity about the relationship between nature and human wellbeing. My background in Horticulture, and later in Applied Health and Wellness Coaching, introduced me to a growing body of research about how gardening can support our physical health, mental wellbeing and connection to the world around us.
On this website, you will find practical advice on growing vegetables, herbs, and edible flowers; companion planting; composting; food preservation; sustainable living; culinary history and seasonal cooking. Alongside these practical topics, I also explore the science of gardening, nutrition and wellbeing, explaining not just how to grow, but why gardening has such a meaningful place in our lives.
I am a qualified horticulturist, but I really do believe that one is never finished learning. I keep exploring new research, discovering new growing techniques and experimenting with new ways to bring seasonal food from the garden to the table. Nature is always teaching us something new, and one of the greatest joys of this journey is to keep on learning.
Whether you have a large garden, a small raised bed or just a few pots on a balcony, my hope is that Nature On A Plate inspires you to take that first step. You don’t need perfect conditions or years of experience to get started. Sometimes all it takes is the planting of one seed.
Thanks for visiting Nature On A Plate. I hope you find this website inspiring to grow with confidence, to cook with the seasons, to reconnect with nature, and to discover the remarkable relationship between gardening, food, and human well-being.

There are a variety of places where you can experience a cooking class

My passion for growing and cooking extends beyond the garden. I also hold a PgD Diploma in Applied Health and Wellness Coaching and have been trained to deliver the Healthy Food Made Easy programme a community-based cooking and nutrition initiative developed by registered dietitians.

Through this programme, I work with individuals and families to build confidence in the kitchen and make healthy eating both practical and affordable. Together, we explore the fundamentals of good nutrition, food safety, meal planning, smart shopping on a budget, and simple cooking techniques that can lead to lasting, positive changes in everyday eating habits.

From time to time, I have the privilege of running Healthy Food Made Easy sessions within communities across Leitrim, helping people discover that nutritious meals don’t have to be complicated or expensive. Watching participants gain new skills, confidence, and enthusiasm for cooking is one of the most rewarding parts of my work.

At Nature on a Plate, my goal is to empower people with the knowledge and inspiration to grow their own food, cook with the seasons, and make healthy choices that fit their lifestyle and budget. I believe that small, sustainable changes can have a lasting impact on our health, our families, and our communities.

What People Are Saying

Helping people build healthier habits has been one of the most rewarding parts of my journey. Through my Healthy Food Made Easy and Health Coaching programmes, I’ve had the privilege of supporting people as they developed confidence in the kitchen, improved their nutrition, and embraced healthier, more sustainable lifestyles.

Here are a few kind words shared by some of the wonderful people I’ve had the pleasure of working with.

”Before I began the programme I felt overwhelmed by healthy eating. I learned how to plan meals, how to shop with more confidence and how to read food labels. Simple changes such as eating more vegetables and cooking from scratch, have made a real difference to my health and how I think about food.”

Member of Dromboylan Community Center

“What I appreciated most was that the advice was realistic and easy to follow. I learned how to read food labels, introduce more vegetables into my meals, and make healthier choices without feeling restricted. I now feel much more confident preparing nutritious meals for myself and my family.”

Member of Ballinamore Community

“The Healthy Food Made Easy programme gave me practical skills I still use every day. I discovered new recipes, learned how to plan my weekly shopping, and became much more aware of what I was putting into my body.”
